Baking from Scratch

Who knew that baking from scratch could be so easy but yet so hard at the same time? I, at first, used box cake mixes that I would “doctor up”. I still do occasionally. But since starting my Home-Bakery, I mainly bake from scratch. That is one of my mottos. When in a pinch, I will resort to a box cake mix. My husband bought me 2 cake recipe books called “The Cake Doctor”. They are a fantastic go-to for turning a box cake mix into almost any kind of dessert. I love it!! I have baked several different gooey bars and cakes from both books. My preference, though, is baking from scratch. It is a challenge I love. Baking from scratch is finicky in that you have to use the right amount of ingredients and not over-mix the batter in order to keep it from being too dry, heavy or dense. It is a trial and error but with enough practice, you will get it down to a science. I have had some failures in the dense and heavy categories. I pretty much figured out that I did overmix the batter before baking it. Since then, I now have three go-to scratch cake recipes that I almost always use. I love seeing the pleasure that simple baking can give to people. I am always looking for new types of cakes, cookies, and other desserts to bake and am open to suggestions any time!
