Crème De Menthe Mirror Glaze Cake

For my Quarter Auction in Punta Gorda in August, I needed to bake something special for one of my auction items. I had some Andes Mints in my cupboard, so I decided that I would bake a Crème de Menthe cake. I made my cake batter and used some mint extract in addition to vanilla extract. I used three 9” cake pans to make a 3-layer cake. I then decided to do a mirror glaze and colored it the colors in Andes Mints. After frosting the cake with a chocolate frosting, I then placed it in the freezer to get nice and chilled before pouring the glaze over it. For a topper, I used some pieces of Andes Mints to place in the middle of the cake. It turned out fabulous!
